farmer's markets - sage butter pasta

Hello, Friends! It’s April! Actually, there is only one full day left in April. But hey, I’m giving myself full credit for getting this email out before the month changed. 😉 We are excited that our first farmer’s market appearance of the 2025 season was Saturday! The Bellville Farmer's Market was cold and rainy, but still a great time! We are trying something different this year and attending a rotation of multiple farmer’s markets instead of the same market every week. Be on the look out for these email updates, as well as on our social media accounts to see where we will be each week! Some of our schedule is still evolving. Without further ado, here are the new recipes I found this month!

Sage Butter Pasta

I saved this recipe because it just seems like the perfect spring recipe. Hearty and warm because of the pasta, but still light with an herbal sage butter sauce. The recipe author uses tagliatelle as the pasta. I must admit I am not familiar with tagliatelle, but the author describes it as a long, wide egg noodle, similar to fettuccini. I don’t tolerate gluten well, so I use the Banza linguini when I want a long noodle. I also like the Barilla red lentil pasta, but I have only ever seen those as rotini.

Marry Me Mushrooms

The other recipe that stood out to me this month is, “Creamy Tuscan Marry Me Mushrooms.” I love a creamy, tomato sauce. All the better if it has smoked paprika in it. Yum! This is a vegetarian main dish. The author suggests you use button mushrooms, but I’m of course biased, and would suggest Black Pearl mushrooms or another type of oyster.

Mushroom Buying Tip

Mushrooms are typically sold by weight and not container volume. I have been fascinated to see how much mushrooms can vary in size and still be the same weight! Lion’s Mane for example seems to stay much more tight and compact when it is colder in the grow room. These compact mushroom clusters can look small in our boxes as they are very dense and heavy for their size! On the other hand, if it is warm and humid, the Lion’s Mane can become incredibly light and fluffy, filling our normal box to the tippy top and still being right at the weight we are aiming for. Another factor that makes mushrooms more dense and heavy is their harvest age, with younger mushrooms being denser than more mature mushrooms.

Where to Buy Our Mushrooms

  • Stoodt’s Fresh Market in Bellville, Ohio. This great little grocery offers a good selection of fresh produce, baked goods, and pantry items. They source local and natural products when possible on top of their nice selection of grocery staples.

  • Sweet Grass Dairy of Ohio - This charming farm store offers pasture raised meats, eggs, and dairy products. They raise all their own meats as well as producing all their own dairy products in their on-farm creamery. We keep mushrooms stocked in the fridge at this location.

  • Bellville Farmer’s Market Find us at the Bellville Farmer’s Market the second Saturday of each month. We will be attending once monthly on the second Saturday.

  • Loudonville Farmer’s Market Starting in JUNE, find us on the last Saturday of each month at the Loudonville Farmer’s Market! We really enjoyed this market last year and are excited to see some familiar faces!
