5 gallon pots of soup, and summertime
Hello, Friends!
Sarah here with the monthly Joyful Soil newsletter. I hope you all had a good month, and that your summer is off to a good start! We have officially made our first circuit of our rotating farmer’s market schedule. We really enjoyed seeing familiar faces and lot of new ones too. We are trying to get our freezers cleaned up and organized a bit in anticipation of packing them with meat chickens very soon. I still have a lot of soup bones left and have been trying to make 5 gallon pots of soup to freeze and meal prep with. I have never been good at meal prepping, but 5 gallon pots of soup somehow work really well in our life! I made 5 gallons of venison veggie last week and the week before that I made a new recipe called Creamy Steak and Mushroom Soup. That one is linked further down in this email.
Market Schedule For July

Creamy Steak and Mushroom Soup
I multiplied this recipe by five when I tried it for the first time last week, so I was glad it was as good as it looked like it would be! Because I was making such a large batch, I used stew beef for this recipe instead of steak. I cooked the meat in the crockpot so it would be nice and tender. . . and so that I didn’t have to be standing over the stove searing 5+ lbs of steak forever. I didn’t have enough of our own oyster mushrooms on hand to make this large batch, so I used about half from our oysters and half white button mushrooms from the grocery store. I also couldn’t find tarragon, but it was still super tasty without it.
Lion’s Mane Pinterest Inspo
I haven’t tried this recipe, but wanted to share it because it is very similar flavor-wise to a fried Lion’s Mane mushroom recipe I have made and really enjoyed, but I love that this one is done on the grill for summertime. Let me know if you try this one! I am keeping it on my list of things to try soon!
Fun Fact
June is one of our favorite months around here because the oldest four of us all have June birthdays! We didn’t plan it like that, it just happened, and makes for a fun month with a big combo birthday party tucked into it.

Where to Buy Our Mushrooms
Stoodt’s Fresh Market in Bellville, Ohio. This great little grocery offers a good selection of fresh produce, baked goods, and pantry items. They source local and natural products when possible on top of their nice selection of grocery staples.
Sweet Grass Dairy of Ohio - This charming farm store offers pasture raised meats, eggs, and dairy products. They raise all their own meats as well as producing all their own dairy products in their on-farm creamery. We keep mushrooms stocked in the fridge at this location.
Bellville Farmer’s Market Find us at the Bellville Farmer’s Market the second Saturday of each month. We will be attending once monthly on the second Saturday.
Ashland Christ United Methodist Church Farmer’s Market. We are excited to visit Ashland on the third Saturday of each month. This market is from 9am-11am.
Loudonville Farmer’s Market Find us on the fourth Saturday of each month at the Loudonville Farmer’s Market! We really enjoyed this market last year and are looking forward to seeing some familiar faces!
