make-ahead breakfast and spring appetizer

Hello, Friends!
I hope that March has been treating you well! The weather is warming up and the daffodils are starting to straighten out. It really does feel like Spring! We got a patio table off the good old Facebook Marketplace, and the kids and I have been enjoying eating our meals outside and doing schoolwork outside more and more often.
Mushroom Egg Bake
I love when we have enough eggs on hand to make this recipe to have for fast breakfasts over the busy weekends. My kids love it too! It reheats easily in the air-fryer or microwave, and you can make it in muffin tins to be even more kid friendly. The recipe I am linking is a great guide, but you can adjust the recipe in many different ways. I have made it with sausage, beef, venison, chicken, and bacon as the meat. I have also used lots of different veggie add-ins. Cherry tomatoes, chopped bell pepper, spinach, and of course mushrooms are all great options. Both oyster mushrooms and Lion’s Mane work well in this recipe.
Herb and Mushroom Bean Dip
With the sun coming out and the world turning green again, I start to crave lighter, greener dishes. I just love the brilliant color on this white bean based dip! This is definitely a side or appetizer in my book, something that would pair fantastic with some grilled chicken thighs and toast, or chips. The recipe author says she eats it as a light meal though, so that’s an option too.
Family Farm News
We started March out with late nights of stoking fires, carrying 5 gallon buckets full of sap, and walking through the woods. Our two weeks devoted to this hobby produced enough of our own maple syrup to last through the year. We are so grateful to have our pantry fully stocked with the mineral-rich sugar, but we are also glad to get back on our normal sleep schedule!

Gnat and Bee - This herbal apothecary offers a truly beautiful selection of teas, body products, and gifts. This is a pick-up location for online orders. Orders can be made by email and picked up at this location on Saturdays.
