Happy May! It’s been a rather cold and rainy month here. Even with the rain, we have been grilling on the grill lots and working on making a patio area at our home so we can get outside more. In June our farmer’s market schedule starts to really pick up. Check out the graphic below for our planned schedule!

Buckwheat Pizza Crust

I am always on the hunt for a great gluten free recipe that is actually EASY. This pizza crust fit the bill! It mixes up super fast and easy with no rising and kneading necessary. It’s definitely a thinner crust. We all agreed this was a good crust for a fast pizza night. I use buckwheat a lot in baking. If you have never tried it before, I highly recommend that you get “light” buckwheat flour. It has a very mild taste and blends well into a lot of recipes. I definitely suggest topping your pizza with some oyster mushrooms. You can throw them raw onto the pizza before cooking, but they will have the best taste texture if you sauté them for a few minutes before adding to the pizza and baking.

If you follow me on social media you might be sick of me talking about asparagus and mushrooms, but here I go just one more time. In my opinion, it is simply the perfect spring side dish. All you need is butter, asparagus, oyster mushrooms, salt, pepper, and garlic. I think it has the very best texture when you give the mushrooms just 1 or 2 minutes of a head start before adding the asparagus. Powdered garlic is fast and easy, but fresh is always extra lovely.

New Oyster Mushroom!

We are excited to add “Grey Dove” to our list of oyster mushrooms. It is very similar to our blue oyster. Visually it is a darker grey color than the blue oyster. It has slightly more texture in the stem compared to the blue, but it is still a highly edible stem and not tough. When I did a side by side taste test of the blue and the grey oysters, I felt like the blue had a little more “mushroom” flavor and the grey had a more complex nutty profile. The grey also picked up seasonings especially well. We love both mushrooms and hope you will too!

  • Stoodt’s Fresh Market in Bellville, Ohio. This great little grocery offers a good selection of fresh produce, baked goods, and pantry items. They source local and natural products when possible on top of their nice selection of grocery staples.

  • Sweet Grass Dairy of Ohio - This charming farm store offers pasture raised meats, eggs, and dairy products. They raise all their own meats as well as producing all their own dairy products in their on-farm creamery. We keep mushrooms stocked in the fridge at this location.

  • Bellville Farmer’s Market Find us at the Bellville Farmer’s Market the second Saturday of each month. We will be attending once monthly on the second Saturday.

  • Ashland Christ United Methodist Church Farmer’s Market. We are excited to visit Ashland on the third Saturday of each month. This market is from 9am-11am.

  • Loudonville Farmer’s Market Find us on the fourth Saturday of each month at the Loudonville Farmer’s Market! We really enjoyed this market last year and are looking forward to seeing some familiar faces!
