Green Bean Casserole

Green bean casserole can be a little divisive, but I am definitely in the camp of people who love it. I don’t understand why this creamy, delicious, way of eating green beans gets confined to “Thanksgiving.” It’s pretty tasty on normal days too. 😉 

I found this version from Megan’s Mushrooms that is a truly from scratch version, but still fairly simple. You could make it even more simple by purchasing the french fried onions instead of making your own like the recipe suggests. (Although the homemade ones look fantastic). My favorite premade one is the Simple Truth Organic brand sold at Kroger.

Beef Stew

Fall weather calls for soups and stews and we enjoyed trying this one recently. We liked that it had mushrooms in it and was pretty easy to pull together. We used a mix of oyster mushrooms, but any decently sturdy mushroom would be a good choice.

Farm Fact

Our mushroom farm is contained in a 40 foot shipping container. When we decided to move out of the upstairs of our home and expand our mushroom grow operation, a shipping container seemed like one of the simpler ways to get a weather-proof structure.
